Simple and Easy Spinach and Broccoli Soup Recipe 🥦🌿

Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups broccoli florets
- 2 cups fresh spinach leaves
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh lemon juice (optional)
Directions:
1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and the onion is translucent.
2. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the broccoli is tender.
3. Stir in the spinach leaves and cook for another 2-3 minutes, until the spinach is wilted.
4. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.
5. Season with salt and pepper to taste.
